Refrigerated

  1. Do not wash until ready to use
  2. Wrap in damp paper towel
  3. Place in plastic bag or container
  4. Refrigerate
  5. Grate only when ready to use—flavor fades quickly after grating
Cut/Prepared storage method for produce that has been cut open (shorter duration, different handling) 2-3 days

Cut Wasabi Root

  1. Wrap cut surface tightly in plastic wrap
  2. Refrigerate
  3. Use soon

Revival Tips

Dried or shriveled root can be trimmed; use the rest for grating. Pungency is best when freshly grated.

  • Real wasabi (Wasabia japonica) is a rhizome; most "wasabi" in tubes or packets is horseradish and green dye.
