How It Works

Fermentation requires an anaerobic (oxygen-free) environment while allowing carbon dioxide to escape. This crock uses a water seal design - the lid sits in a channel filled with water. CO2 bubbles out through the water, but outside air can't get in.


Pack prepared vegetables into the crock, press them below the brine level using the included weights, fill the water channel, and place the lid. Fermentation happens over days to weeks depending on temperature and desired sourness. The ceramic construction maintains stable temperatures and doesn't react with acidic ferments. The water seal prevents mold growth that can occur with open fermentation methods. The result is probiotic-rich fermented vegetables that can be stored for months refrigerated.
