How It Works
Freeze drying (lyophilization) works in three stages. First, the food is frozen to extremely low temperatures (-30°F to -50°F). Then a vacuum is applied while gentle heat sublimes the ice directly into vapor, bypassing the liquid phase. Finally, a secondary drying phase removes any remaining bound moisture.
This process preserves food far better than traditional dehydration because the cellular structure remains intact. When rehydrated, freeze-dried food returns to nearly its original texture and flavor. Nutrients are also better preserved since no high heat is applied. The resulting food is incredibly lightweight and shelf-stable for decades when stored in mylar bags with oxygen absorbers.
