Paper Towel Wrap

  1. Don't wash until ready to use
  2. Wrap loosely in paper towel
  3. Place in plastic bag or container
  4. Store in warmer part of fridge below 40°F can cause chilling injury
  5. Keep away from ethylene producers
Cut/Prepared storage method for produce that has been cut open (shorter duration, different handling) 2-3 days

Cut Eggplant

  1. Brush cut surface with lemon juice prevents browning
  2. Wrap tightly in plastic wrap
  3. Refrigerate immediately

  1. Slice and brush with lemon juice
  2. Blanch in boiling water 4 minutes
  3. Cool in ice bath, drain well
  4. Transfer to freezer bags

  1. Slice eggplant and salt to draw moisture
  2. Pack in jars with pickling brine
  3. Process using water bath canning
