Roots in Water

  1. Don't wash until ready to use leeks have sand between layers; wash when ready to use
  2. Keep roots attached
  3. Place roots in jar with water
  4. Store in refrigerator
  5. Change water every few days

Damp Paper Towel

  1. Don't wash until ready to use
  2. Wrap in damp paper towel
  3. Place in plastic bag or container
  4. Store in refrigerator
Freezing freezing method 10-12 months

Frozen

  1. Clean and slice leeks
  2. Blanch in boiling water 2 minutes
  3. Cool in ice bath, drain well
  4. Transfer to freezer bags
  5. Best for soups and cooked dishes

If wilted, trim root end and soak in ice water for 30 minutes.
