Evak Vacuum Container

The Prepara Evak is an airtight food storage container built from heavy-duty borosilicate glass and stainless steel, so only glass and steel touch your food. A patented twin-valve plunger lid removes air from the container to create a vacuum-like seal that slows oxidation and locks in freshness. It is a popular choice for coffee beans and ground coffee, and works equally well for tea, cereal, nuts, grains, flour, spices, and other dry pantry goods. Using the Evak takes no buttons, pumps, or levers: you simply fill the container, set the lid on top, and push down to force the trapped air out through the twin-valve system. To access the contents you pull the handle back up, which lets the valves draw the lid up cleanly. Removing the air reduces the container's exposed oxygen, which is the main driver of staleness, rancidity, and loss of aroma in dry goods, so coffee and other perishable pantry items hold their flavor and freshness longer. Because the seal is created mechanically each time you close it, there are no gaskets or pumps to wear out, and the low-plastic, borosilicate-and-stainless construction keeps odors and off-flavors from leaching into the food.
